Fried Rice

There are quite a few varieties of Fried Rice. This procedure which I have given here is simple and very tasty. The will make fried rice for four adults. 

 
Ingredients:
  1. Fine rice:                      2 cups
  2. Carrot:                         1-2 nos.
  3. Beans:                         200 gms
  4. Onion (medium size):   2 nos.
  5. Capsicum:                    1 no.
  6. Vegetable oil:              2 tbs.
  7. Salt:                            To taste.
Procedure:
  1. Cut the carrot into fine slices.
  2. Cut beans into fine slices.
  3. Cut onion into fine slices.
  4. Cut capsicum into fine slices.
  5. Wash the rice grains in cold water.
  6. Boil the rice in a pan. Add little salt and 1 tsp of oil. Boil rice till 3/4 is done.
  7. Drain and cool the rice by keeping in freeze for about 2 hours.
  8. Heat the remaining oil in pan.
  9. Fry onion till the onion becomes golden brown.
  10. Add carrot and beans and fry for 2 mins.
  11. Take the rice out of the freeze, transfer to the pan. Keep turning the rice now and then.
  12. After about 5 mins, switch off the heat, add the sliced capsicum.
  13. Serve hot.
Tips:
  1. Rice should be added in boiling water, and stried from time to time to avoid sticking.
  2. Instead of refrigerating the cooked rice, it may be spread on a tray. This is done for drying the rice.
  3. Use of the onion is optional.
