Maseledar Chicken in Bhuna Gravy

Ingredients:

  1. Chicken:                       1 Kg
  2. Mustard oil:                 ½ cup
  3. Onion sliced:                3 medium
  4. Ginger paste:              1 tsp
  5. Garlic paste:                1 ½ tsp
  6. Tomato chopped:         2 large
  7. Cumin seed:                1 tsp
  8. Coriander seed:          1 tsp
  9. White pepper:            ½ tsp
  10. Bay leaf:                      1 No.
  11. Red chilli:                     4 Nos.
  12. Mustard seed:             ½ tsp
  13. Poppy seed:                 2 tsp
  14. Green cardamom:        4 Nos.
  15. Cloves:                        6 Nos.
  16. Cinnamon stick:           1 inch
  17. Scraped coconut:         2 tsp
  18. Green chilli:                  8 to 10 Nos.
  19. Turmeric powder:        1 ½ tsp
  20. Garam masala:            1 tsp
Marinade:
  1. Curd:                           1 tsp
  2. Garlic paste:               ½ tsp
  3. Salt:                            ½ tsp
Procedure:
 
Cut, de-skin and clean the chicken pieces. Marinate chicken pieces in the marinade for 3 to 4 hours, preferably in refrigerator.
 
Spices:
 
Roast cumin seed, coriander seed, green cardamom, cinnamon stick, cloves and mustard seeds till aroma comes out. Reduce heat and then add poppy seeds, bay leaf, red chilli, White pepper balls and coconut. Roast for a few seconds, till the colour of coconut changes to light brown. Paste all roasted spices with little water in a mixer.
 
Main Dish:
 
Heat oil in a wok. Fry the onion till it turns golden brown. Add garlic paste and fry for 2 minutes more. Now add chopped tomato, fry till tomatoes become soft. Add chicken pieces, increase heat, and continue cooking till oil leaves sides. Adds paste of roasted spices, salt and cook for 2 minutes. Add little water and then pressure cook for 5 minutes. Add garam masala powder and decorate with green chillis and serve hot.
 
Tips:
  1. You may cook the dish in refined oil also.
  2. For crispy chicken, you may fry the chicken pieces after marination.
  3. If kept in an air0tight container, the dish stays tasty for 4-5 days.
  4. You may add halved medium sized potato.
