Moong Dal
Bhaja Moong Dal is a simple fried dal preparation, which goes very well with steamed rice, and any vegetarian and non-vegetarian dish.
Ingredients (to serve 4):
- Moong dal (small grain): 1 cup
- Haldi (turmeric) powder: 1 tsp
- Salt: ¾ tsp
- Whole cumind seed: ½ tsp
- Vegetable oil: 2 tsp
- Ghee: ½ tsp
- Sugar: ½ tsp
- Green chili (whole): 2 numbers
Procedure:
- Take 2 cups of water in pressure cooker and bring it to boil.
- Add ½ tsp of oil and salt.
- Roast moong dal till it turns light brown.
- Wash the dal and slowly add it to the boiled water in pressure cooker.
- Pressure cook on low flame for 5 minutes, turn off the gas.
- Take out the dal after the steam has released.
- Heat rest of the oil in a wok.
- Add whole cumin seeds and bay leaf to the smoking oil, fry till aroma of fried cumin seeds come out.
- Lower flame, add boiled dal and boiled water to keep consistency to your desire.
- Stir constantly for a minute on low flame.
- Add sugar and ghee.
- Turn off the flame.
- Garnish with green chili and serve it with hot steamed rice.
Cook's tips:
- After cooking never boil the dal on high flame, which forms scum on the surface.
- You can use mastered oil instead of vegetable oil as cooking medium.
- Serve this dal with some aromatic lemons (I mean Gandharaj lebu) and potato chips.
