Sorse Ilish
Ilish is a delicacy, which can be cooked in several ways. Even fried Ilish is liked by many people. Here is a simple recipe of Ilish mustard paste, commonly known as sorse ilish.
Ingredients:
- Ilish (Hilsa) fish: 4 pices
- Onion paste: 1 tsp
- Haldi (Turmeric) powder: 1½ tsp
- Mustard paste: 1 tbs
- Mustard oil: 2 tbs
- Salt: To taste
- Green chili: 4 nos
Procedure:
- Marinate the fish with salt and Haldi (Turmeric) powder and keep aside for 15 minutes.
- Heat oil in a wok.
- Fry onion paste till translucent.
- Add Haldi (Turmeric) powder and salt. Lower heat.
- Cook the fishes in this 'masala' for 2 minutes.
- Dissolve mustard paste in water and add salt. Let it stand for 10 minutes.
- Add this paste to fish in wok.
- Immediately add about 1 cup of boiled water.
- Bring the mixture to boil.
- Lower the heat and cover the wok.
- Cook for 7-8 minutes.
- Dry the excess water by heating in high flame.
- Turn off heat, add 1 tsp raw mustard oil, green chilies and fresh coriander leaves.
- Serve with steamed rice or khichuri.
Tips:
- Hilsa fish is soft fish, do not over cook.
- Adding raw mustard oil is optional.
- You may fry Kalonji in oil, before starting, which adds flavour.
