Sorse Ilish

 

 
Ilish is a delicacy, which can be cooked in several ways. Even fried Ilish is liked by many people. Here is a simple recipe of Ilish mustard paste, commonly known as sorse ilish.
 
Ingredients:
  1. Ilish (Hilsa) fish: 4 pices
  2. Onion paste: 1 tsp
  3. Haldi (Turmeric) powder: 1½ tsp
  4. Mustard paste: 1 tbs
  5. Mustard oil: 2 tbs
  6. Salt: To taste
  7. Green chili: 4 nos
Procedure:
  1. Marinate the fish with salt and Haldi (Turmeric) powder and keep aside for 15 minutes.
  2. Heat oil in a wok.
  3. Fry onion paste till translucent.
  4. Add Haldi (Turmeric) powder and salt. Lower heat.
  5. Cook the fishes in this 'masala' for 2 minutes.
  6. Dissolve mustard paste in water and add salt. Let it stand for 10 minutes.
  7. Add this paste to fish in wok.
  8. Immediately add about 1 cup of boiled water.
  9. Bring the mixture to boil.
  10. Lower the heat and cover the wok.
  11. Cook for 7-8 minutes.
  12. Dry the excess water by heating in high flame.
  13. Turn off heat, add 1 tsp raw mustard oil, green chilies and fresh coriander leaves.
  14. Serve with steamed rice or khichuri.
Tips:
  1. Hilsa fish is soft fish, do not over cook.
  2. Adding raw mustard oil is optional.
  3. You may fry Kalonji in oil, before starting, which adds flavour.
