Egg delight is a very simple recipe of eggs, potatoes, cooked in a spicy curry. This can go with rice, parota or chapati. Here I have made it for 2 people

Ingredients:

  1. Boiled eggs sliced into 2 pieces each:  2 numbers
  2. Potatoes: 1 big, cut into 4 pieces
  3. Onions sliced: 1 tbs
  4. Garlic sliced: 1 tsp
  5. Ginger (optional): ½ tsp
  6. Tomatoes sliced: 1 tbs
  7. Turmeric powder: ½ tsp
  8. Red chilli powder: ½ tsp
  9. Garam masala powder: ¼ tsp
  10. Warm water: ½ cup
  11. Vegetable oil: 2 tbs

Procedure:

  1. Boil the eggs and the potatoes, adding ½ tsp salt to the water.
  2. Slice the eggs into half.
  3. Heat the oil in an oak till smoking hot.
  4. Lower the flame and lightly fry the boiled potatoes and the boiled eggs, taking care to fry both sides till just brown.
  5. Remove fried eggs and potatoes into a clean bowl.
  6. In the remaining oil, fry onions, then garlic, till translucent. Add the tomatoes, fry till meshy. Lower flame, add turmeric powder, chilli powder, continuously stirring the mixture till the it leaves the sides of the oak, add a little warm water to prevent the mixture from burning.
  7. Add garam masala powder and salt to taste, stir a little then add ½ cup warm water and let the cooking continue till you get the gravy to your desired cosistency.
  8. Garnish as you wish.
  9. Serve with hot rice or paratha and green salad.

Cook’s tip:

  1. While frying eggs, take care the yolks do not come out.
  2. Fry the spices on low flame and keep on adding very small quantities of water to prevent it from burning.
